It’s official…the Wedding Season has begun! Our chefs have been downstairs over the past few weeks prepping for upcoming Weddings in the Cotswolds. Our Events Team are excited to be back in the swing of things and making every Wedding special.
On the 15th August we had our first Wedding of the season! It was Hannah & Ed’s beautiful day at The Barn at Upcote, and after much planning we had created the perfect menu for their Wedding day. To start, Hannah & Ed had chosen the Sharing Board Starter which consisted of Cotswold Pork Pie, Ham Hock Terrine & Picalilli, Herb Seared Tuna & Salsa Verde, Hot Smoked Salmon and Cotswold Cured Meats. Our Sharing Boards always go down a treat at a Wedding and it’s a great way to get everyone socialising at the table. Our chefs prepared a vegetarian option of Heritage Tomato & Buffalo Mozzarella which was presented on a large board where the guests could pick from.
For the main course, Hannah & Ed chose another Sharing Board which included Slow Roasted Pork Shoulder, Bramley Apple Sauce, Sautéed Potatoes, Fennel Seed Croquette & Jus served with bowls of Seasonal Green. The vegetarian, vegan and pescatarian option was Green Beans & Coconut Thai Green Curry with Bulgar Wheat. Both dishes went down a treat and the guests could not praise the chefs enough!
Dessert was a Chocolate Fondant which was presented alongside a scorched sweep of Marshmallow and Raspberry Coulis. This sweet treat had the whole room smiling and looked incredible. The Wedding went superbly and our team thoroughly enjoyed being part of Hannah & Ed’s special day. We wish you both every happiness!
Before our Events Team knew it they were preparing for another Wedding! This time round it was for the lovely Kate & Patrick who held their Wedding at the wonderful Cornwell Manor. Our team took the short trip over to Cornwell Manor to set up the tables and decorate the room with flowers ready for for the anticipated Wedding meal.
Our staff started off by serving canapés of Beef & Horseradish Croquettes, Smoked Salmon & Creme Fraiche Blinis, Prawn Cocktail Cones and Spicy Crispy Chicken Skewers.
It was then time for guests to take their place at the table and listening to the speeches. As soon as the speeches were complete, our staff were ready with the starters which was Chicken Liver Pate, Red Onion Marmalade & Sour Dough. A pescatarian option of Cornish Potted Crab, Avocado, Cucumber & Green Salad was available to guests who asked for it.
This was followed by the two options of main course: 10 Hour Slow Cooked Shoulder of Lamb, Pea Puree, Boulangere Potatoes & Jus and Sea Bream, Field & Wild Mushrooms, Spinach, New Potatoes & Green Sauce which were both served with bowls of Seasonal Vegetables.
For dessert our chefs prepared Lemon Posset & Shortbread and Rhubarb & Custard Tart. These were served alternately, so the people you were sat next to had a different dessert from you. We find this to be really successful and creates conversation between the guests about what their dish tastes like.
Later on in the evening, our chefs were back in the kitchen making Mature Cheddar Cheese & Red Onion Maramalade Toasties for the Evening Food. This is a great dish to have, especially after dancing around with your friends and celebrating Kate & Patrick’s Wedding.
