Here at Ross and Ross, we’re huge fans of oysters. They’re a bit of a treat and we’re committed to sourcing the best quality seafood for our clients’ events. We were lucky enough to find Flying Fish Seafoods, in Cornwall, who pride themselves on getting their catch from the sea off Cornwall to your plate in 48 hours or less. They share our commitment to sustainability and use traditional fishing techniques to support the local Cornish fishing industry and ensure that we’ll be enjoying delicious British seafood for many generations to come. Their Porthilly Cornish oysters are the best we’ve found in the British Isles and take pride of place in our oyster canapes station that wedding guests love. We can neither confirm or deny the aphrodisiac effects of fresh Cornish oysters, but their reputation does make them a fitting addition to your special day.
We most often use oysters as a canape station, bringing extravagant theatre to your drinks reception. We love watching guests who haven’t tried oysters before daring each other to have a go (and hopefully enjoying them!). We serve them on a bed of ice and samphire, pre-shucked and ready to be eaten. They are accompanied by Tabasco sauce, shallot and sherry vinegar and lemon wedges, so that guests can choose how they have theirs.
We encourage our guests to make the oyster canapes station their own by adding little touches that are personal to them. Last year, one of our couples had their wedding at Cornwell Manor and accompanied their oysters with mini glasses of Dark Side Bath Ale, which was the perfect accompaniment. Another couple had a glorious marquee wedding last summer, and wanted a show stopper of a seafood starter. We pulled out all the stops and did a tiered display of oysters, crab claws, peeled king prawns with zingy lemon mayonnaise, fishcakes and herb-seared tuna with salsa verde. Guests loved trying all the different elements, and cracking open the crab claws – with varying levels of success!
The oyster canapes station fits with our ethos about wedding food – we aim to bring people together to enjoy a special meal in celebration of a momentous occasion. Hands-on sharing experiences just add to the memories of a special day.
